When we were in Michigan in fall 2010, Annmarie and I took a walk in a park near the college in Ann Arbor.
On our 4-5 mile hike we found an amazing array of wild edibles. Two of my favorite were high bush cranberries and wild ginger. The smell of fresh picked wild ginger is so distinct and fresh that I can still recall the scent as I’m writing this.
Ginger is a fantastic cooking herb for flavor, but also very potent medicine.
Ginger can be used therapeutically to help gastrointestinal unrest, reduce inflammation and has even been shown to has positive effects on some types of cancers.
For cooking (or raw food preparation) ginger gives a sweet, strong and spicy flavor that can’t be matched.
Usage: Use ginger in raw food or cooked dishes as much as you like.
To use for gastrointestinal issues, heat water to boiling and add 1 inch of ginger – chopped – and lemon. Let this steep for 3-5 minutes and drink.
I’ve never used a ginger extract, but I’m sure there are some on the market that you could use in a more therapeutic manner.
Ginger may cause heat in the body, so if you run hot, you may want to eat less – just experiment and see what works for you!
