I used to making Dandelion coffee when I was about ten or twelve years old. I've only just started to get back into making it some thirty years later. What prompted me was rather a lot of large Dandelions in my garden and allotment. Why waste them I thought? I've experimented and found roasting for five minutes on a medium heat on a splatter cover, remove and mix up in a bowl, replace on the splatter cover and put back in the oven for a further five minutes. Repeat again giving a dark, even, roast.

Relatively easy to make and, with the price of coffee these days, you can make quite a saving. I can't drink coffee of an evening unless it is decaffeinated so Dandelion (or Chicory which is related and used commercially) which is caffeine free, is an excellent alternative.

If you roast your Dandelion coffee at the same time you're already cooking something in the oven then this coffee is zero carbon.

I have discovered a labour saving way of cleaning the roots: zip them up in a delicates' bag and stick them in the washing machine on the coolest, shortest wash with no spin. Don't add soap!

Dandelion root provides vitamin A, vitamin C, vitamin D and vitamin B complex, as well as zinc, iron and potassium. it grows in abundance all over the United States, but be careful to only harvest the root in unpolluted areas, dandelions like to come up just about anywhere and can tolerate polluted soils.
